Well, my friends, it has been a long time since I made a substantial post.
This last year has been crazy! Travel alone to Hawaii, Australia, Germany, Italy, and France took up about 6 months! Boy was it fun though! Diving, researching, an amusement park I wish I could live in, amazing food, seeing family. That was a wonderful 6 months.
The birth of my niece in December! Little Faye.❤ She is so adorable! I love watching her and yes, I do spoil her as well as teaching her that Auntie Kayla is the best person in the world. I even went so far when setting up her nursery area in my 2nd bedroom, to have a frame that plays an MP3 I made over and over again, saying Oba, lah tahnt, Tia, Aunt Kayla So she learns Aunt Kayla in all the languages I speak. Since I told my sister I would speak all four around her so when she starts school, she will have a basic understanding of more than one language like our Grandmothers did with us. I may have also added a few phrases saying how amazing Aunt Kayla is too so it’s brainwashed into her.😂 I’ve also had her spend time at with me at both Dojos. Judo and Karate. She will be starting her first discipline at 6 like I did if I have any say in it. 😂 Needless to say, when she is with Aunt Kayla, she is extremely spoiled. ❤
Now I want to put out there, that we have an election coming up that is probably the most important election of our lifetimes. I won’t go on and on about it, everyone has to make their own choice. But for me, my friends, my family, your families, your friends, especially the women in your life, I’m imploring you to do the research and vote for Kamala Harris for our next President. You know me, I HATE, HATE Cats, but I even went so far, that when I lost a bet, I’m now wearing a Cat Ladies for Kamala hat daily!😂
That said, let’s move on. The new school year has started, and I am officially working on my 2nd degree. Adding to my Masters in Marine Biology, I have started my Bachelors in Archeology. I need to finish some research, but to do so, I need more knowledge in a few areas. Though I will admit, that having a minor in Art history this time is a guilty pleasure, having had a love of art my whole life instilled into me by my BioMom, I decided to indulge it this time. So I will be adding along with diving, food, and Marine Biology posts, some Archeology and Art posts. I will also be adding this year, articles on all the subjects that I find interesting.
Finally, something I’ve been promising, it seems like, for forever, my Seitan Recipe. I’m sharing my chicken one as it is the most versatile in recipes.
MY HOMEMADE SEITAN RECIPE – CHICKEN
Make your dough
1-cup vital wheat gluten
1/4 cup chickpea flour (You can use any flour I like how the chickpea flour firms up.)
1-cup water
Mix in a bowl and make the dough
Knead for 5 minutes
Let sit for 5 minutes

Make your broth, this is what flavors it, this is for chicken flavor. (I have recipes for pork and beef flavors too.) You’ll need about 6 cups of broth for this amount of dough.
Some will start with a low-sodium veggie broth. I make my own Mirepoix stock (carrots, onions, and celery) that is salt free.
Then I add:
1/3 cup soy sauce
1/4 cup nutritional yeast flakes
1 teaspoon white wine vinegar
1 teaspoon poultry seasoning (McCormick [I use their Grillmates Montreal Chicken seasoning] & Spice Island are guaranteed vegan)
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon liquid smoke

Instructions:
While the dough rests, stir all of the broth ingredients for your choice of broth together in a large pot.
Place the pot over high heat and bring the mixture to a boil. Lower the heat to a low simmer.
Cut the dough into at least 4 large pieces, or if you prefer, smaller strips or chunks.
Add the dough to the broth.
Allow the broth to simmer for 1hour, uncovered, watching closely to ensure it stays at a low simmer (don’t allow it to boil rapidly).
Remove the pot from heat and allow it to cool a bit.
When the seitan is cool enough to handle, you can cut it into smaller pieces. Use it in a recipe immediately, or store it in the broth.
Refrigerate for up to 5 days, or freeze.
I prefer to let it sit a day in the broth to soak up more flavor.
I freeze what I don’t use and it lasts for a few months.
