I have friends who are not vegan who constantly ask, “Can you eat the same things we do but vegan or is it all weird foods and veggies? One of the things we do in our school/friend’s Discord room is share meals and recipes. It’s not all studying. That was one of the reasons I started my blog. So I could write fun, interesting, and delicious things up and post links for them to enjoy.
So tonight I am sharing vegan chicken parmesan. Made with Impossible Foods vegan chicken patties, my Homemade Marinara Sauce, and Vitalife Vegan Parmesan cheese, using Barilla Pasta, most of which is vegan.
It’s quite simple actually. Make the pasta as you usually would.
When cooking the Impossible patties, sprinkle one side with garlic powder and oregano. Halfway through, when you turn them, sprinkle the other side as well.
Have on hand, the marinara sauce, or if you have time, make it in advance using the recipe I’ve linked to.
Simply plate then microwave to melt the cheese. If you like, place the spaghetti in a baking pan, lay the chicken on top, cover in sauce and cheese, and bake at 350 for about 12 to 15 minutes until the cheese melts…
Sprinkle with crushed hot chili flakes just before serving to spice things up.
