I get asked by my non-vegan friends, what is comfort food for me. First I ask them back. One that comes up many times is things with country gravy. Chicken fried steak, fried chicken, etc.
My response is, “I LOVE COUNTRY GRAVY!”
Which more times than not, throws them for a loop. How can I a vegan enjoy the warm comfort sensations of creamy country gravy dripping off a piece of something or slathered all over things like potatoes?
My answer is vegan country gravy. With the advent of certain products by vegan meat producers, it has gotten even better. Especially the Impossible Foods Chicken Patty. Those were made for gravy of all sorts, from my vegan chicken gravy (My next post I swear!) to this country gravy. Fry the patties in a skillet with live oil straight from the freezer. They are way better than baked this way.
So here is my delicious version.
INGREDIENTS
¼ cup vegan butter
(I use Miyoko’s salted butter.)
¼ cup flour
3 cups vegan milk
(I use Oatly Full Fat Oatmilk.)
¼ teaspoon salt or to taste
¼ teaspoon pepper
You can add in other spices, I prefer paprika.
This makes an amazing sausage gravy with Impossible Brand Breakfast Sausage.
Especially the Impossible Foods Brand Spicy Sausage.

INSTRUCTIONS
1. Melt your vegan butter on low heat
2. Whisk in flour. Let cook for 1 minute.
3. Whisk in milk, salt, and pepper. Simmer on low for 3 minutes.
*If adding sausage. Cook like any other sausage, but use the pan the sausage was cooked in to make the gravy. Deglaze with the butter first before adding other ingredients.*
